Fermentation / Cellaring: Temperature controlled stainless steel, split into two lots using two different yeasts. The wine was aged for 14 months in a combination of neutral and 20% new French and European Oak. We deployed a French technique called “batonage” by stirring the wine while on its lees, allowing for French inspired rich and creamy mouth feel. The wine was then lightly filtered before bottling.

From our estate vineyard in Santa Rosa, our approach in making our Chardonnay is borrowed from the French, where less is more. To maintain balance and not overpower our wine with too much oak flavor, we restrict the percentage of new barrels to just 20%. We then perform blending combinations from all of the barrels until we select the very best for our reserve.
Tasting Notes: On the nose, apple blossoms, vanilla, citrus with a hint of toasted oak. On the palate, you’ll discover crisp green apple and butterscotch. Balanced with good acidity, this wine is meant for food and will age for many years.
